Happy Tuesday, everyone! A cold/bug/viral illness has struck our household, and Johnathon, Hadley Kate, and I are all battling a runny nose, scratchy throat, and low grade fever. Lame. Fortunately, Deanna has a comfort food recipe to share with us today!

Today, I'm sharing with you how to make Chocolate Protein Crepes! I for one have never made a crepe in my life! Wait for it… I’ve never EATEN a crepe in my life! It always just seemed like a fancy pancake type thing that is only served at fancy brunch places… I know, I know, go ahead and ask me how long I’ve lived under a rock. Well, I made them and will definitely be trying them at a restaurant now! By the way, with these...think omelet, NOT pancake… otherwise you may be disappointed. These crepes are refreshing and more of a treat than a hearty, savory breakfast. So, save it for a day you have a sweet tooth.
Chocolate
Protein Crepes
2 whole eggs
2 egg whites
1 packet or scoop chocolate WHEY protein powder (whey is needed for
consistency!)
Non-stick spray
½ cup plain Greek yogurt (I love Oikos triple zero- sweet
for the little sugar it contains)
½ tsp vanilla extract
¼ tsp (1 drop) maple extract or maple syrup
2 Tbsp Peanut Butter, melted
Cinnamon, dashed
Fresh berries
Directions:
Combine all eggs and protein powder in a medium bowl; mix
well. Heat small nonstick skillet and
spray with oil- medium-high heat.
Pour about ¼ cup batter into skillet. Cook for 1-2 minutes, until mixture starts
forming bubbles, flip and cook for 30 seconds.
Repeat with remaining batter in ¼ cup measurements. Makes approximately 3-4 crepes.
Combine yogurt and extract in a small bowl; mix well.
Fill crepes with yogurt mixture and add desired filling (I
used the peanut butter), berries, and cinnamon.
Fold in half and enjoy!
