If you had told me when I started blogging that I would be doing a recipe post on here, I would have laughed. Hard. I remember the first time I "cooked" for Johnathon, I ran out to the closest super Target and bought pre-made Chicken Parmesan and tried to pass it off as homemade. After that, there were lots of date nights where we "cooked together" off of recipes Johnathon's mother emailed him. I guess I proved that the way to a man's heart isn't always through his stomach because he put a ring on it anyway in spite of my culinary failings. LOVE YOU BABE!
I am proud to report that I have made some progress in the cooking department. I think being on an island with no restaurants has really required me to step up my chef game! Most of my recipes, however, are Pinterest or other online finds. This has led me to knowing a thing or two about trying to find easy, healthy recipes online, and going through many bad recipes before finding a good one. And then it hit me...I could save myself and all of you a lot of time by sharing some recipes from this pretty lady:

I know how hard it is to try and come up with creative, healthy meals every night, all while trying to make them tasty enough for even the pickiest eaters! That's why Deanna and I got together to share some of her healthy, simple recipes that are fast, easy to make, and best of all...GUILT FREE!
Here is Deanna's recipe for a Spinach and Feta Omelet that's perfect for a quick breakfast that won't leave you starving 30 minutes later!
Spinach & Feta Omelet
2 Eggs
¾ cup Spinach, chopped
2 Tbsp Feta Cheese, crumbled
½ Tbsp Coconut Oil
Oregano, Optional *
Sriracha, Optional to add spice*
Using medium-low heat, melt coconut oil in a small
skillet. Scramble 2 eggs until well
combined. Add Feta cheese and Spinach and stir until coated.
Pour mixture into skillet and allow to cook, adding oregano
if desired. Fold the omelet in half
when it looks like the outer half is cooked (no liquid). I highly recommend holding the spatula on the
fold for 10-15 seconds so the flip holds- mastering an omelet can be tricky!! Cook 1 minute while folded, flip and cook
another 30 seconds.
Cut omelet in half and add sriracha, if desired, for a kick
of spice. Enjoy!
